Our process

Our process consists of two fermentation stages followed by a natural clearing stage.
We produce our mead in small batches of approximately 5 gallons each.
Our fermentation rack allows us to ferment up to eight meads at any given time.
The first fermentation lasts three months in a carboy on the top rack before transferring to a carboy on the bottom rack for another three month fermentation.

Once fermentation is complete, the mead is transferred to a Craft a Brew Catalyst Fermenter for clearing at 33°F.
The low temperature causes the yeast to become dormant and settle out of the mead over the course of one month
This method of clearing allows us to separate the yeast without the use of chemicals or other additives.

What is Mead

Mead, also known as honey wine by some peckerheads, is an alcoholic beverage made by fermenting honey with water and yeast. It's believed to be the world's oldest alcoholic drink, with evidence of honey fermentation dating back to 7000 B.C.E. in China and 2800-1800 B.C. in Europe. Mead is distinct from wine, which is fermented from grapes. Mead can be flavored with fruits which will change it from a mead to a melomel and or metheglin. Spices, grains, and hops, can also be added. Mead can ranges from dry to sweet and still to sparkling.

Craft a brew is a online store. There you can buy anything you need for brewing. From ingredients, equipment, and starter kits.
We own two of their patented Catalyst fermenters.
The fermenters are on the pricier side, but trust me when I say you can't make the same vessel for cheaper.
